Flowers

There are flower stands and street vendors selling flowers EVERYWHERE here. Beautiful, freshly cut flowers. They are dang cheap too!

Ryan makes sure I always have fresh flowers in our house. This is going to be one of those things I will miss when we get back home. It's just so cheap and readily available here.

Escalators!

All of the stores here are in a mall. They don't have stand alone stores. For the most part, you have to go up an escalator to get to the store. The carts have some kind of magnetic brake in the wheels so they don't roll when you are on the escalator.

My girls love escalators! I am glad they are getting their escalator fix while they are down here.

Chili Rellenos

I asked my maid, Edith (pronounced Eh-deet here in Mexico), if she would teach me how to make a few Mexican dishes.

She made the MOST DELICIOUS Chili Rellenos today. She made 4, but by the time Ryan gets home I may just tell him that she forgot to make them because I am going to eat them all before he gets home. MY WORD they are delicious. I watched her and helped her make them and then wrote down every step of the recipe. I don't know if the chili's or the cheese is available in the States. I asked a dear friend to check Harmon's for the cheese. As for the peppers, they are not as hot as most peppers (bless her heart, she knows me well). I really didn't make any Mexican dishes before coming here. So, they may be a super common pepper and I just don't know, if not... google them, and let me know if you can find the peppers and cheese back home.

Here is the recipe, let me know if you make them, ENJOY!

Edith's Chili RelleƱos
4 poblano chili's                                              
Manchego or Oaxaca (pronounced wah-hock-uh) cheese                            
2 eggs                                                                  
4 lg roma tomatoes                                                         
½ onion, sliced      
2 garlic cloves, minced
2 c. water
¼ c. flour
Salt & Pepper
oil

Toast peppers in large frying pan on each side until skins are black. Place blackened peppers in a large ziplock, place ziplock in a grocery sack, wrap a towel around and place in microwave to sweat the peppers, so the skins come off easily. 

Boil water, blanch tomatoes and peel skins off (throw them away). Place blanched tomatoes in blender with water they were blanched in. Blend until liquid. In another frying pan, cook onion and garlic in 2 Tbls of oil, until it becomes fragrant. Pour tomato sauce into pan, cover and simmer on low until it becomes slightly thick. Season with salt and pepper.

While it is simmering, peel black skins off peppers, make a slice lengthwise down pepper, with a spoon, scoop out seeds. Place 4 thick (¼") slices of cheese in each pepper, and close pepper back up.

Pour oil in large frying pan, enough to cover the bottom of the pan. Place on medium high heat so it gets hot while you do the next step. 

Whip two egg whites until soft peaks, add two yolks and mix just until combined.  Place ¼ cup of flour on a plate. Pat flour onto each chili, dusting the outside of the pepper. Then place in egg, and cover completely with egg. Place in hot oil and lightly brown each side. Place on paper towels to soak up the oil, then place in the tomato mixture and spoon tomato over the chili's. Let simmer for 10-15 minutes. 


I will for sure be making these when I get back. They are SOOOOO yummy! I hesitated posting this because I don't want someone to make these and say "EWWW, those were nasty!" Because if you thought that... you made them wrong. Just sayin'.

The Fairy House

We pass this massive house on our way to church every Sunday. My girls call it the Fairy House because it looks like a house that comes straight out of a Tinkerbell movie. All of the doors, windows, gates, fences and even the design on the sidewalk is curved and has such a unique design. They love this house.

Colors

I have mentioned that Mexico is a very colorful country. It's more than just the houses. There are some of the most beautiful trees and shrubs here. Bright purple trees called Jacarunda (I am sure I spelled that wrong, but it is pronounced hack-uh-run-duh). They are GORGEOUS! These vibrant violet colored bushes are everywhere too, as well as trees with red flowers/petals. They are SO pretty.

A park!

We found a park! They have lots of parks here, but I haven't seen one I would be willing to stop at. We happened on this one and I think it will be our go-to place. The girls loved it. They ran to it screaming. It was like watching a child who grew up in Arizona and was seeing snow for the first time. Cute girls.

The many things we take for granted in the States. Great, safe parks.

Rain, rain, go away.

We have officially started the rainy season here. I was told it goes from June - Sept. Hopefully since it starred early that means it will end early. It is beautiful and sunny in the morning and then the clouds come in after lunch and it rains or drizzles or sometimes just a crazy downpour for a few hours and then sometimes it stops by bedtime, or it doesn't stop. Either way, if there isn't thunder and lightning (which there usually is), my girls are playing in it. We love summer rain.

Last summer in Utah, it rained one day, like a pelting hard rain for about 20 minutes and it filled the gutters up so much it was a river down the street. We saw neighbors getting waterski inner tubes out and floating down. My girls and I were leaving the subdivision when we saw a stroll drain clogged by debris and there was about 2 feet of water in the gutter and street. We jumped out of the van and just played in it. Then the drain cleared, the rain stopped and we left. We love to play in the rain.

Meditate

We certainly take time during the day to meditate, on the back of the couch, with our legs hanging down, while trying not to giggle.

Meditate.... yeah right.

Goodnight

This is how Abbie is soothed. Holding my arm near her face, rubbing my elbow in one hand while putting her lips on my skin to feel it. She has done this since she was a baby, and I think it is so adorable.

Mother's Day

I was spoiled this year for Mother's Day. The girls and I have been eyeballing this darling little backyard playhouse every time we go to Costco. But the price tag was making it a difficult decision for Ryan and me. So, for Mother's Day, he gave me some sanity, errrrr I mean a playhouse. I love my children, SO much. They are my everything, all day, every single day, except once a month for 2 hours when I go to enrichment. I needed something for these cuties to do outside so that I could have 10 minutes of "alone" time.

We spent most of Saturday putting this together, and boy oh boy did we have help. A lot of help. But, it was so much fun and they are having a blast playing in it.

I also got a mighty dose of chocolate and some much needed windshield wipers.

What more could a girl want? No really.... I have everything I could ever want. This is one VERY blessed mom.

I feel Jesus.

Most of these posts are just journal entries for me, so I don't forget the little things.

Here is a sight words worksheet I had Brooklyn work on. She handed it to me and said, "feel, Mom, I put I feel Jesus"

Isn't that so sweet, and so true.

Oh, and I guess she loves fish. I am sure she was thinking Goldfish crackers. Mmmmm, I can't wait to have goldfish crackers and graham crackers again.

Slick floors = fun!

After our maid cleans our floors, they become very slick. My girls love to drag each other and slide on the floors.

Hey, it's cheap entertainment.

Mexican dancing

My cell phone screen shattered and I am scared I am going to cut myself on the keyboard. So, I am braving it and ready to get a bandaid if needs be.

A couple weekends ago, Ryan's co-worker down here and his wife invited us to  a Stake Activity in their Stake. It was a Mexican Dancing performance by a huge group of lds high schoolers. It was AWESOME!

There is a professional dance show here called Ballet Folklorico which is the same kind of show, just on a professional level. It's on my "bucket list" to see while we are here.

There were so many dances and costumes, and different kids of Mexican music. I learned that each state in Mexico has it's own song or "anthem" as well as dance, and a costume to go with it. How cool is that. The U.S. seems to lack some culture. I mean, let's show 50 birds and flowers from each state, yippee.

Anyway, it was loud and colorful and so much fun. One of our favorite dances was when the kids put a glass beer, errrrr I mean Coke bottle on their head, partially filled with water and they danced with it on their head, without it falling. It was so neat to see. The costumes were so beautiful, I think we will have to buy some for our girls.

Xochimilco

We went on Saturday to a fun place called Xochimilco. It's an area in Mexico City that has canals all around the little city. You go in these fun wood "gondola" type boats around the canals. The people that live there get around by their own small wood boat. A lot of the people make things and sell them from their boat. They just pull up next to your boat and sell you stuff. This is probably my FAVORITE thing we have done in Mexico City thus far. We will totally go back!
